{ Getting ready for Easter }

_MG_0943

It was such a gorgeous day today, beautiful blue skies and 70 degrees.  I was heading out for a quick errand, but ran back in to grab my camera, because I just had to take a pic or two.

Life in the country is not only peaceful, but I find that every single day I see something new, or have my breath taken by the beauty around me.  I've always been partial to country roads, there's just something about them that I love, so to be able to live on one is a blessing.

I didn't really feel like going anywhere today because I had so much to do at home, but I had to pick up a few things for Easter weekend.  I set off in the morning, got some gas in the truck and then ran to my local Dollar General for some sodas since we're having my brother, sister in law and nephew over on Sunday, also needed some paper towels, but ended up getting a few other bits and bobs.

For special occasions I like buying a bottle of Moscato and can usually get them for $3 at the Dollar General.

I grabbed a new dishwashing tub for my sink, and 2 chocolate bunnies for the kids for Easter.

You know, I miss my kids being younger and giving them the big Easter baskets filled with candy and games and that annoying green grass looking filler that got everywhere in the house.  They've completely outgrown it all and don't much care for too much chocolate or sweet stuff, I guess because they can have it any other time during the year.

I came back home and got right to work in the kitchen.  Made some crab salad for Nick and I, and some Tuna salad for Jasmine (she does not like seafood of any kind).  Also boiled 12 eggs that we will decorate tomorrow and then I'll make deviled eggs out of on Sunday morning, and also got dough going for the Hot Cross Buns.

It's a family tradition, something I've been doing for many years.  I loveeeee Hot Cross Buns, especially for breakfast, toasted with some butter.  Yum!!

This year I doubled the recipe so that we can have a a few leftover.  I'll freeze whatever isn't eaten this weekend, it will be nice having some on hand when the craving arises.

24 Hot Cross Buns.  Did I go a little overboard?

Nah!!!

I also made some homemade Vanilla Coffee Creamer.  I've been wanting to make it for a while, because as much as I enjoy the creamer I buy in the store, it's filled with so much unnecessary stuff, chemicals and weird things I can't even pronounce, and I'm getting to a point in my life where I desperately want to try and eat a little healthier, maybe not ingesting so many processed foods.  It's easy to say that we want to do this, but taking that step and starting out is the hard part.

Baby steps, I believe, just small accomplishments and victories every single day, changing one thing now, and another in a few days or even weeks and so on.

I'll share with you the how to tomorrow.  It's so simple and you can add whatever flavoring you want.

The rest of the day was a usual mixture of schooling, cleaning, some sit down moments here and there and some cuddling with Marley.

I have a busy weekend ahead, and so I'm off to bed, will probably pop on the telly for a bit and then drift off to sleep.  The drifting off TO sleep is never the problem, it's the staying asleep or falling back to if I wake up in the middle of the night.  Wish me luck :)
