With fall just around the corner and so many wonderful recipes being shared, constantly, amongst the blogging ladies....I thought that it would be neat to have a feature every thursday, just for crockpot recipes.
What do you think??? Do You have some great recipes to share, or perhaps you're looking for some delicious ones to give you a reason to pull out the ol' crockpot???Well it's thursday ladies and you know what that means. Time to pull out those crockpots and put them to good use. If you want to join in, just grab the banner and add your name to Mr Linky :)
One meal that I grew up with and I love, but don't make often enough, is Stuffed Bell Peppers. I just don't ever seem to have the time to make them, so when I found a recipe for a Crockpot version, I knew I just had to try it.
STUFFED PEPPERS
1 lb. estra lean ground beef
1 can (8oz) tomato sauce
1 can (15oz) Spanish Rice
1 lg onion, chopped
1/2 tsp salt
1/4 tsp black pepper
4 lg bell peppers, tops removed, cleaned of seeds and cored, but not halved
Combine all ingredients, except half can of tomato sauce and bell peppers.
Stuff bell peppers full of mixture.
Place peppers in slow cooker. Pour remaining tomato sauce over peppers.
Cover. Cook on high 4 hours.
Makes 4 servings
EDIT: Thank you Sue for mentioning the Can of Spanish Rice. Ladies I've never seen it either, so I just use the pouches that they sell, it works fine too, it might need a little water though, I found that I had to add a little to mine, just do whatever you like for yourself :)

Sue - thank you so much for stopping by :) The recipe calls for the can but I just use the spanish rice pouches, actually thank you for mentioning it so that I can go and edit it for the others :)

What I love about your recipe is the photo - how pretty to use the three different colors of peppers. I'm not forgetting that next time I make stuffed peppers!
