CROCKPOT CHICKEN TACOS
6 boneless skinless chicken thighs
2 cans tomatoes with green chilies
1 package taco seasoning mix
In a Crock-Pot, add all ingredients and cook on low 7-9 hours or until chicken is tender and easily shreddable.
Serving Suggestions: Serve with warmed corn tortillas, shredded cheese, salsa, and whatever else you like with your tacos. Add a bit salad and you're set.
REALLY EASY MIXED BEAN CHILI
1 can pinto beans, rinsed and drained
1 can black beans, rinsed and drained
1 package taco seasoning mix
1 jar salsa
1 10-ounce package frozen corn
1 sweet potato, cubed
Dump everything into a crockpot, set on low, and cook for 6-8 hours. Mix well before serving.
Serving suggestion: Serve with a big green salad and some corn muffins.
Wow - you are so efficient today, getting this posted so early! I think I will try the chicken tacos this week. I bought chicken on sale and was looking for a new way to use it. I think my family will like this!

I hadn't thought about making tacos in the slow cooker; but that does make since when you're using to chicken so it's nice and tender and easily shredded! I might just make this next weekend when my MIL is here as I was thinking of having tacos one night :)
