Slow Cooking Thursday!



All my slow cooking recipes are now online and starting today, I will add all the recipes shared weekly to my online del.icio.us site too. So if you're wanting to find ALL the slow cooked recipes that have been shared since the first SLOW COOKING THURSDAY, here is the link for you.

German Potato Salad

6 cups peeled and thinly sliced potatoes
1 large chopped onion
1 cup sliced celery
1 cup water
⅔ cup apple cider vinegar
¼ cup sugar
1 tbsp quick cooking tapioca
½ tsp celery salt
½ tsp ground mustard
6 slices cooked crumbled bacon

Instructions:
Spray crock pot with cooking spray. Mix potatoes, onion, and celery in crock pot. In a small bowl, combine water, vinegar, sugar, tapioca, celery salt, and ground mustard. Pour over potato mixture. Cover and cook on low 8 hours, high 4 hours. Prior to serving, stir in cooked crumbled bacon. Serve warm.

  3. Tapioca, like pudding? I've never used that in a recipe before, I'll have to try it. For some reason I can't ever make potato salad. I always get my potatoes too done, and it ends up being mashed potatoes when I start mixing everything together. Most of the time I cheat and just buy it already prepared in the deli. I know too expensive that is why it is a treat, and we seldom have it.

  7. Sandra, this is a great recipe! I've never had german potato salad because when I see it on a buffet table it always has pork bacon in it, but I'm going to test it out with turkey or beef. Thank you!

  11. I never would have thought to use my slow cooker to make potato salad; although it does a good job of making scalloped potatoes. I am going to try this recipe (love the bacon!) but I find apple cider vinegar just smells too strong for my taste. What would happen if I omitted the vinegar, or is there a substitute I can use? Please let me know, thanks.
