Slow Cooking Thursday!

All my slow cooking recipes are now online and starting today, I will add all the recipes shared weekly to my online del.icio.us site too. So if you're wanting to find ALL the slow cooked recipes that have been shared since the first SLOW COOKING THURSDAY, here is the link for you.

Don't forget to add your name to Mr Linky and a link back to your SCT post so others can come by and see your recipe too.

As always, share your slow cooking recipes but if you REALLY REALLY don't have one and still want to participate, then you can share any kind of recipe.

Mexican Beef Stew

This is a great tasting crockpot recipe I am sure your family will enjoy!

3/4 pound lean beef stew meat, or an inexpensive piece of beef roast-- cut into 3/4 " cubes
½ large onion -- chopped
2 cloves garlic, minced or a large spoonful of chopped garlic from a jar
1 can Rotel tomatoes
1- 15 oz. can whole-kernel corn -- undrained
1 1/2 teaspoons dried oregano leaves -- crushed
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon ground red pepper
2 tablespoons yellow cornmeal

Put all the above ingredients into your crockpot except the cornmeal. Cook on low for about 8 hours or until the meat is tender. Turn the crockpot to high and stir the cornmeal in and allow to cook and thicken for about 25 minutes. Serve with tortilla chips or cornbread or even rice.

  12. Perfect Timing! I am attending a chili feed / get together for a group I am part of this weekend. This sounds just different enough from all the standard regular dishes that will be making an appearance. Yeah, I know it is not a chili, but this group won't care! I am going to put it together for the event, but maybe spice it up a bit more.

  15. Thanks so much for the tip! I had a feelings it would be something along those lines. The recipe is growing on me as I finish the batch off, so I am willing to give it another try...especially since it is so inexpensive once you have already purchased the spices.
