I love Libby's, even before being contacted by them, the veggies and fruit cups that I buy have always been from Libby's.
I was sent some veggies and asked to come up with a recipe for the holidays.
At first I was a little worried that I wouldn't be able to put something together, but then I decided to start thinking about the food that I like, the food that I'm used to cooking and to mesh the two into something.
And so the Black Bean and Bacon Veggie Bites were born. Joining together the flavors of my Portuguese heritage by using a dough very similar to Pasteis de Massa Tenra (fried dough with a meat filling), curry, veggies, and bacon. Can't go wrong with all these together.
I'm really happy with the end result and the kids gave it a huge thumbs up. So let me show you the recipe and then we'll talk about the giveaway that I think you all will love.
Black Bean and Bacon Veggie Bites
Ingredients:
2 cans of Libby's Mixed Veggies (peas and carrots), drained
2 cans of Libby's black beans, drained and rinses
Half a pound of bacon, cooked until crispy and crumbled
Small onion, finely diced
2 garlic cloves, finely diced
olive oil
salt and pepper
curry powder
heavy cream
Small square Wonton Wrappers
Oil to fry
In a big skillet, add about 2 tablespoons of olive oil, the onion and the garlic. Cook over medium heat until onion is transparent, careful not to burn the garlic.
Add in the mixed veggies, beans and bacon. Season with salt and pepper and curry powder (I just eyeball it according to the heat that I want, this time I added about a teaspoon). Stir well and cook for a minute or so, you don't want the veggies to get mushy.
Add heavy cream, just enough for the filling to bind well and create a smooth creamy consistency.
Remove from the heat.
Add a little less than a teaspoon in the middle of each wonton square, use water wet the edges and fold into a triangle, adding a little more water as necessary to keep the wrapper from opening.
I left some as triangles, and others I folded in half to make little pouches. It's up to you.
Fry in vegetable oil until golden brown. Drain on paper towels.
These are so delicious and a great appetizer either for Thanksgiving or Christmas.

I would love a new crock pot. I have been using the same ole crock pot going on 12 years. It still works just fine but having a new one with a timer and better controls would be a huge help for our family of 5. Thank you for the opportunity!!

ReplyDeleteI would definitely keep the crock pot. Mine, which was a hand-me-down from my mother in-law and 30-40 years old, died about a year ago. Then my sister gave me hers, but I don't think it has the original lid because it doesn't fit well. And, I would love an oval shaped cooker. So, that is why I would keep it. Now to like Libby's...

ReplyDeleteI would give this slow cooker to my friend. She is a stay-at-home mother who I have just come to know this last year. I am a military spouse who usually has other military spouse friends. This is our first assignment away from a base in the civilian world. She has been such a kind-hearted friend. Recently, her slow cooker broke. She was using it just about every day with having an infant. I would love to win this and give it to her.
ReplyDeleteWe don't have very many Libby products available to us here in CA, but the ones that are available, I do choose over other brands (we don't have any Libby beans or vegetables around here....just pumpkin products and sauerkraut and beets). I would LOVE the crockpot! I would use it for myself, our 7 quart had no handles left....they've all broken off (both sides and the handle for the lid)....I use my crockpot to take hot dishes to parties/potlucks, etc and apparently the little flimsy plastic handles that the Rival crockpot has aren't meant to carry the weight of a full crockpot. I have to wrap a towel around my crockpot and wrap my arms around it to move it now....makes it rather difficult to work with. Really NEED a new crockpot, just don't have the extra funds for what I want :)

Right now my family and friends were all affected by Hurricane Sandy ( I live in NJ) and they have lost everything. I would give it to the local charity to donate to a family who has lost everything!
