Cooking Thursday - Salmon Croquettes

Salmon Croquettes



Ingredients 
1/4 cup diced onion
1 pound fresh salmon, skin removed and diced
Salt and pepper, to taste 
1/4 cup of mayonnaise
1/4 cup of bread crumbs
Minced garlic, to taste
1 teaspoon mustard
1/4 teaspoon Old Bay seasoning 
Parsley and Cilantro, to taste
 
 
Directions
 
In a small skillet, add a little bit of olive oil and fry the onion until translucent.  Transfer to a big bowl.  To the onion, add the salmon, salt and pepper to taste, mayonnaise, bread crumbs, garlic, mustard and old bay seasoning  and parsley and cilantro.

Mix well, then form into small croquettes.

In a small bowl, add some breadcrumbs, then roll each croquette in the crumbs and set on a tray.  Repeat with remaining croquettes.  Place in the fridge for 30 minutes to an hour.

When time is up, remove from fridge, and fry over medium heat for about 3 minutes on each side.  Serve immediately!

Musical Throwback Tuesday - Honestly by Billy Joel

A hot summer night, around 3am, we are all packed into our family wagon, and we're traveling down the road towards the Kruger National Park. I am around 12 years old and have been looking forward to this trip for months. 
 
We woke up around 2am, had a quick bite to eat and packed the car. 
 
My dad and stepmom are seated up front, and in the back me and my 3 brothers are laying, all over each other, one head on a shoulder, one laying on the seat, one against a window. 
 
We slip in and out of sleep on the 6 hour trip. As we make our way down the dark, quiet highway, this song plays on the radio. It's one of my favorites and to this day, makes me cry.

{ Happy Homemaker Monday - 03/17/2025 }

Happy Homemaker Monday
 
Good morning friends, come on in out of the cold.  

It is Monday morning, and the start to a new fresh week ahead.  It is also St. Patrick's Day, not that I've ever been a huge fan or celebrate it every year, but once in a while I do enjoy making some Irish goodies, so today we will be having a delicious Shepherd's Pie and there will be an Irish Soda Bread made.  For sure!
 
I do have a recipe on my food blog, if you want to make one for yourself.   I wish you all a very blessed week ahead.  I'm sorry I didn't get to visit your posts last week, but I will be doing today.

The weather in my neck of the woods:::
The winds have been absolutely insane.  Last week, we actually a windy day that produced a very Mars like atmosphere.  It kind of reminded me of Arizona and the dust storms we would get.  The sky turned orange, everything looked so apocalyptic, it was just crazy.  Unfortunately the winds make the allergies kick up, and we've all been struggling.  There is more wind on the way this week, and I'm not thrilled about that, but hey ho, we'll deal right?

I'm typing up this post pretty early in the morning, it is just 7:01 am, and it's still super dark outside, so I can't see anything.

Sitting in bed and working on this post, while watching a video on YouTube on the telly.  I'll share the channel below, I just recently found it and have been enjoying it.  
 
 
Something fun to share (a blog, a video, a tip):::
I recently came across a channel by a very sweet girl named Bonnie Barton.  I just love watching her, she is very much like me in the sense of the things she likes, colors, themes, books and so forth.     
 
 
 
Thinking and pondering:::
I have found that this week I stepped away from social media, I was able to reconnect and reground myself.  Sometimes it's good to step back and put your thoughts together, figure out what you want, what you don't want and make some changes here and there.  
 
That is what I did.  The older I get the more I realize that I have zero patience for certain things.  I've never been one to follow the crowds, but as the years go by, I get even more selective in who I let into my life, who I allow around me and even the books that I read.  Example.....my younger self would love a romance book with smut, or naughty writing.  Today, I can't stand it, I find it gross, and I associate it with porn.  Honestly!  My mind has just changed over the years and especially as I have gotten closer to God.

Been loving working on the Cosmic CAL.  I am on Part 6, and there are 9 parts in total.  So, not quite there yet, but getting close.

My simple pleasure:::
Watching my live Portuguese TV.  I have a small tv in my kitchen and when I'm in there, cleaning, doing dishes or cooking, it is set to the live channel from Portugal.  It reminds of my childhood.  We always had a little tv with the Portuguese tv playing.  Just love it ♥      


Looking around the house:::

I need to carpet clean both the living room and the den/dining room area.  We had rain a few days ago and with the constant in and out, it tends to leave some spots.   
 
 
From the camera:::
I'm very much looking forward to Spring and warm days, but I must say that walking by this corner every morning, and seeing how cozy it looks, it also brings to mind that even Winter has it's own charm.

{ Weekend in Review }

It was a good weekend, filled with family moments, homemaking, gardening, reading and some random YouTube videos here and there.
 
Saturday, Curt and I had lunch with my brother and sister in law, at our local Cracker Barrel.  It's been one of my favorite places to eat, since I can remember, although, I will say that I feel the service and the food itself is not like it used to be.  I often feel this way in many restaurants, since Covid, everything seems to have gone downhill food wise.  It's sad!
 
Sunday was a very quiet day, just basically sitting around and relaxing, making a barbecue for dinner for my daughter and her boyfriend, and just doing my usual pottering around the house.  
 
I don't have much to share, so this weekend in review is pretty short, but I didn't want there to be missing blog days.

My social media break technically ended on Saturday but I have yet to post anything.  I will more than likely do it today, but in the meantime, I went through and unfollowed and removed from my page a bunch of people.  

Some love having a huge count of followers, I prefer to have a select few that I know care about me and my life, and engage with me and my posts, than having hundreds of followers that quite frankly have never once seen one of my Instagram stories, don't ever engage in any way etc.  I think the older I get, the more I am listening to the Holy Spirit and removing from my life people, things, and situations that don't bring me joy.
 
Anyway, it was a good weekend, even if it did feel like it passed so quickly, but that's ok.  Hope your weekend was as good and relaxing as mine.
