Nothing important just some Bloggity News!!!

I've been trying to catch up on all my favorite blogs and what's going on, boy are there busy ladies out there. I figured my post today would be to get you all up to date on what is going on around Blogland.

Jaymi at The FlipFlop Mamma was one of the first bloggers I met online, she's just such a sweetheart and unfortunately due to busy schedules and craziness on my side, I hadn't been around to her blog in forever. Yesterday she just popped into my mind and I knew that I needed to go see how she was doing because last time I had checked she was pregnant with her third child. What do you know, she's got a gorgeous baby boy who was just born on Monday. Go on over and see the baby!!!




Some prayers are needed for Kelli, she was taken to the emergency room on the 11th and amongst other major problems now has an unknown infection. Please keep her and her family in your prayers at this time. Her wonderful daughter has been keeping everyone updated here.


Mari-Nanci at Smilnsigh brought this blog to our attention and boy am I glad she did. Addie at My Life A to Z is a soldier, here's how she describes herself:

I'm just a chick who's madly in love with her husband Greg and who also happens to love her Country. This is my second tour of duty in Iraq and this is our story.
She talks about what her life is like and really gives an insight into what soldiers go through, I'm amazed and I'm proud of her and being a military wife it touches my heart, she shares her address in case we want to send a package or something and she even tells us what she is in most need of....so let's get on it please, let's send Addie something, even if just a letter to let her know that we appreciate her and are keeping her in our prayers.


That's what is going on in BloggyLand, now for what's going on here at home, I don't have much to tell you, really, I don't have anything interesting or a funny story or mind blowing experiences to share. It's just little ol' me and I can be quite boring at times, so I'm sorry if I put you to sleep with my babble LOL

Curt worked late last night and we were supposed to go out to dinner but ended up just staying home. I had told the kids I would get them some Sonic but I had the worst headache ever, the Nasonex that I use for my allergies is the culprit, but it's either that or dealing with itchy nose and mouth and congested etc. I think I chose the less of both evils!!!

So what was dinner??? I'm ashamed to say because I'm thinking you may not find me as such a great cook after all...........are you ready for it???

Stop the presses, Sandra served frozen pizza and potato chips for dinner, something is terribly wrong with that picture isn't it??? I just tell myself that it's only ONE NIGHT and won't happen again. LOL

Anyway, we're heading out for the day, not sure yet what we're doing but we've gotten used to having a family day out every saturday and it thrills the kids to get out and about. I'm sure I'll be back later with more stories and photos to share.

Right now I need to get out of my pajamas and into some real clothes and get ready for the day. Help yourselves to some hot coffee and some muffins, there's Chocolate Chip, Lemon, Banana Nut and Cheese Streudel....see, I made up for the frozen pizza *wink wink*

What a day!!!


I've been running around getting groceries, doing errands and everything else that comes with a payday. It's one of the days I do enjoy getting out of the house and being on the go, but when I finally sit down I'm exhausted.

I look around and realize I have yet to do the breakfast dishes, laundry, sweep and mop and make the beds. Everything is falling behind and I need to get a move on it. Unfortunately I have a bit of a cold and my allergies are kicking my behind today, I used the Nasonex but it gives me horrible headaches, so it's pretty much a no win situation. Thing about me is, I don't give up and I don't back down, so I'll plow through the house work until I'm satisfied with it, headache or not.

Thank you to all the ladies who participated in the Slow Cooking Thursday, I've got a wonderful collection of recipes already and can't wait to try them all. I've tried a few and have yet to be disappointed in any, so good job ladies, keep them coming.

You know how it is the day before you get groceries, it always seems like you've run out of everything??? That's how I felt last night but I was still able to whip together a great meal, actually now that I think about it, I enjoy cooking when I'm having to use bare essentials or whatever is left in the freezer.


One of those quick and delicious meals that I make when in a bind, is also one that the family most enjoy.....I think it's the smoked sausage that they like the most. *wink wink*
I try to always keep some smoked sausage (kielbasa or polska) around. Just slice it up, in a skillet add some olive oil, a little bit of chopped onion (optional), cubed potatoes (or leftover hashbrowns) and you can even throw in some peas or other veggies if you want. Salt and pepper and that's it, you're done, it's really good and fast and surprisingly filling.

To go with it, I made a Dump Cake, again something fast and easy to make. I guess I wasn't in the mood for sitting in the kitchen fixing an elaborate dinner LOL


Oh and I almost forgot, I also had some Homemade Chicken Soup ready too. We ate, we filled our tummies and we felt wonderful.

The kids are doing much better, there seems to be some sort of weird cold going around, it usually lasts only a day or two and then it's like it never happened. Unless you're me, of course, then it hangs around as long as it possibly can just because. I'm just glad it's the weekend though, I could use some sleeping in.

On monday morning I'm getting my cysts removed from my left wrist and actually looking forward to it, is that not the silliest thing you've ever heard??? I guess because they've getting to the point where they're bothering me and I'm finding it hard to do much with this hand, at least it's the left hand and not the right. So anyway, that's what is coming up next week.

Tonight I plan on relaxing and catching up on the blogs and then some reading, I'm truly enjoying the Julia Quinn's Bridgerton Series.

I have no clue what I'm fixing for dinner tonight, the day I get groceries is usually left open because we tend to grab something on the go or go out as a family later for a meal. It's one of those things we enjoy doing and since it's only on payday, it's almost like a ritual LOL

So I'm heading out, I'm keeping this one short, my head is pounding and my throat is hurting. I hope you all have a wonderful friday. I leave you with this video that I found on GodTube, it was so powerful for me to watch, I truly hope you all enjoy it too.

Slow Cooking Thursday!!!


Morning ladies, it's thursday and time for another Slow Cooking Thursday. I'm sporting a new SCT banner so go ahead and update your old ones when you get a chance.

Thank you again to all the participants, I've gotten such a wonderful collection of recipes already and can't wait to see more.

Crockpot Western Omelet Casserole

Ingredients:
1 bag (32 oz.) frozen hash brown potatoes
1 lb. of bacon diced, cooked and drained OR 1 lb. cooked ham, cubed
1 med. diced onion
1 green bell pepper diced
1 � C shredded cheddar or Monterey Jack cheese
1 dozen eggs
1 C milk
1 tsp. salt
1 tsp. pepper (more or less to taste)

Directions:
Place a layer of frozen potatoes on the bottom of the slow cooker, followed by a layer of bacon then onions, green pepper and cheese. Repeat the layering process two or three more times, ending with a layer of cheese.

Beat the eggs, milk and salt and pepper together. Pour over the Crockpot mixture, cover and turn on low. Cook for 10-12 hours.



And here's a great one for the Fall Season coming up, it's a wonderful way to use up the leftover pumpkin.


Crock Pot Pumpkin Butter

Ingredients:
5 lb pumpkin gutted and quartered
2 c. sugar
2 tbsp cinnamon
1/2 tsp. all spice
1/2 tsp mace or nutmeg

Directions:
Quarter pumpkin. Remove 'guts', seeds, and stem (leave skin on). Place pumpkin and 2 cups water in your crock pot. Cook 4 hours on low.

Scoop pulp out of pumpkin skin. Mash with potato masher. Add sugar and spices to mashed pumpkin. Cook down 6-8 hours on low setting. Spoon into jars.

This recipe is made as a refrigerator butter. If you wish to preserve pumpkin butter for shelf storage, use a standard hot water bath canning method. Great on home made breads, or stirred into plain yougurt.

Sick, Soup, Sewing!!!!


What do they all have in common??? Well, it's what's going on in this house this morning.

Jasmine is home from school, remember the birthday party on sunday with the water balloons and getting soaked down??? I guess that was the beginning, because yesterday everyone started sniffling and by this morning, the kids are both running fevers and not feeling well and I'm not much better off either.

Right now I have some homemade chicken soup cooking away on the stove, it smells heavenly and it's one of those things that just make you think of childhood days. I vividly remember my greatgrandmother making chicken soup and checking on me while I lay in bed surrounded by books or napping. Gosh I miss her!!!

Anyway, the kids are settled in front of the tv, pillows, blankets and favorite cuddly toys in hand, some whimpering is heard at times and even some bickering, but for the most part they're too miserable to mess around. I'm keeping them fed and giving them plenty of fluids.

I so wish I could also just veg out on the couch, but I can't, I need to take care of them and there's still a house that needs taking care of, so I'm hoping to get all that stuff done and out of the way so I can sit back and do some sewing.


I'm always looking for projects or crafts to make with the kids, so this weekend we've decided to try our hand at some Rock Candy. The kids are excited and honestly, so am I. I'm hoping it turns out good.

If everyone is feeling well, we're also planning a day at the Castles and Coasters Amusement Park........though if we're not, it's home with movies, popcorn and cuddling on the couch. For some reason the second choice is more appealing to me!!!

And now I need to get off, I wish I could chat more today but kids need my attention and I'm feeling a little queasy myself. I feel like I have a chest cold and when I was at the doctor he said it's caused by a lot of dust and pollution in the air around here. I've been coughing and seems that it's loosening up all the gunk in there which actually makes me sick to my stomach.....sorry if I grossed anyone out.

I'm going to finish off the chicken soup and make myself a cup of hot tea with some honey and lemon.

Honey Lemon Tea

INGREDIENTS

* 1 cup water
* 2 teaspoons honey
* 1 teaspoon fresh lemon juice
* 1 teaspoon white sugar, or to taste

DIRECTIONS

1. Pour water into a mug. Add honey and heat in the microwave for 1 minute and 30 seconds. Stir in lemon juice, mixing until honey is dissolved, then stir in the sugar.

Oh the joy of coffee!!!


I don't have many things in life that I truly feel like I need to have everyday, no real indulgences, well............other than coffee.

It's crazy how much a part of my life and routine it's become, my body gravitates towards the kitchen in the morning and as if in programmed mode it gets the coffee pot going.

So when something happens to upset that rhythm, I get cranky.


It so happened that this morning was one of those, I was fasting for 12 hours to get my Cholesterol test done, so I got up and as usual went into the kitchen only to stare at the empty coffee pot and realize "You can't have any until AFTER the test"........Great, so now I'm already irritated, I'm also hungry but can't eat anything and Jasmine is doing the usual 8 year old girl trying to get ready for school thing. Doesn't want to wear this, doesn't want to wear that, these shoes, no those shoes, do my hair up, no I want it down........UGH!!!

I finally got down to the hospital and got the test done, you will all be happy to know that I am being tested for Cholesterol, Diabetes and my Thyroid.....I don't know why the thyroid but whatever LOL

I will let you all know once the results are in.

So it's 10:30 am and I'm sitting here FINALLY drinking my coffee and boy does it taste good. It's like instantly my body says "Oh yes, this is right".

I've been trying to catch up with all the blog visits but it's just taking forever, I am not spending time on the computer like before, which has helped my eye strain immensely........but you guys just blog way too much, you're always blogging and posting and I can't keep up. Maybe you should all stop for a week???? Just so I can get up to date???? No???? Oh well, it was worth a try.

Sunday I felt horrible, I seem to have a bit of a cold going on and the allergies were just overwhelming so I was pretty much good for nothing..........other than cooking. Do you know that when I don't feel well is when I actually enjoy cooking the most???? Is that not the weirdest thing on earth???

Well the kids were outside playing and Curt was watching them, the neighbors were in their yard and invited the kids over to their house for their little one's birthday. I couldn't go so Curt went with them. They had a blast, go to play with water balloons and by the time they returned home 2 hours later, they were soaking wet and talking a mile a minute about what fun it was.

While they were gone I had Betsy's Chicken Bacon & Swiss Melts in the crockpot and I baked some fresh Amish White Bread. Their faces when they returned home was just too funny, they couldn't believe I had cooked while sick but they didn't complain once I started slicing that hot bread and spreading yummy butter on it. If you've never tried the recipe, you have GOT to try it. I first found it at Kelli's blog and have since made it many many times, it's fast, it's easy and it's just sooooo good. They taste even better than they look, believe me.


We've been working on our trip to Africa next year, saving money, finding tickets etc....the kids are just super excited and so are we. I haven't seen my family in so long and I miss them dearly, I can't wait to get back home. I want to be able to show my children all the places I lived and went to school.

In the meantime, we're trying to enjoy Arizona and visit as much as we can while the summer is still here, not that it really matters, I don't think it ever gets really cold LOL

But we're also trying to do things that don't involve a lot of money seeing that we're saving for our trip. So this is what I've jotted down so far, we'll just cross them off the list as we go, some we may get to before the others, depending on how much they cost.

After trying to figure out what to do yesterday, we decided to just get in the car and head to some much anticipated Western Fun. What a blast it was!!!

We did end up spending money but it was well worth the fun and let me tell you, we WILL be back pretty soon.

So I come bearing pictures and stories, settle in you won't want to miss it, especially the highlight of the day when I realized I had been munching on something so yummy, only to find out it was Rattlesnake!!!! Go ahead and get nauseous if you will, it was delicious but the minute I found out what it was, I think I went a little green around the gills LOL

It's just like stepping back in time to the 1880's, there's cowboys walking around swinging their guns and shooting and ladies in the old western dress attire.

Nicholas was fascinated with the cowboys, we bought him his own play gun and holster and he had the best time.

A fifth generation working blacksmith who bends iron and forges creations in metal right before your eyes! Offering decorative and personalized branding irons, signs, home and barn décor, and items for the cowpoke and cityslicker alike.


The kids were eager to try out the different attractions, so the first stop was the horse ride. Jasmine has been on horses before so she was fine, Nicholas on the other hand was scared and looked a little hesitant.

After the horse ride came the train ride, it's called the Desert Train and it takes you around the outskirts of the main street.





There was just so much to see and so many things to do, we had to wait until nighttime to go on the Stage Coach Ride, so we didn't really see much at all, but it was still fun.

We walked into the stores and picked up some souvenirs, tried the Petting Zoo but also had to wait until night because there were so many people. In the meantime the kids got on a few rides and we also got some coins.






You not tired yet???????????? I know I'm sharing a lot of pictures and videos but in my defense, I just couldn't help but take as many as I could.

We're almost done, because we ended off the night with dinner at the Rawhide Steakhouse and Saloon. We had the special of the day which included a huge steak cooked in whiskey, the best mashed potatoes ever, fresh vegetables, cowboy beans, cornbread and then the fried yummy stuff that I later found out was actual rattlesnake LOL

Best part?????? From now until the end of September, two kids eat free from the children's menu with each paid adult entrée. So Jasmine and Nicholas ate for free. Now you can't beat that!!!

There's a dance floor and a live band and it's just such a wonderful atmosphere.



And with that we waved goodbye to the wonderful Rawhide Western Town with the promise of returning soon, VERY soon to actually watch one of the RAWHIDE ROUGHRIDERS shows.

The roughest, toughest, stunt show around with an entirely new look. These boys are the real reason the West was wild! Witness gunfights, explosions, daring falls, and all the antics of the cowboy characters.

Crepes and Cinnamon Coffee anyone?????

I woke up this morning with a craving for Crepes and since they're so easy to make and I can bet that you all have the ingredients on hand, I set to work making some. So before I even start my post, here's a basic recipe in case I've gotten anyone craving them too......oh and here's a cup of hot cinnamon coffee while you cook.


Basic Crepes

INGREDIENTS

* 1 cup all-purpose flour
* 2 eggs
* 1/2 cup milk
* 1/2 cup water
* 1/4 teaspoon salt
* 2 tablespoons butter, melted


DIRECTIONS

1. In a large mixing bowl, whisk together the flour and the eggs. Gradually add in the milk and water, stirring to combine. Add the salt and butter; beat until smooth.

2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.

3. Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve hot.

I had my eye exam yesterday and Praise the Lord everything is perfect, my eyes are fine, there's no need for glasses or anything at all. I do have really dry eyes and the Arizona air is extremely dry which is bothering me a lot, but I'm on some eye drops to help that out. Of course, monitoring my time on the computer is also helping.
So thank you all for your prayers, I truly appreciate them :)

I've been reading like crazy lately, I go through these phases. You all know that I'm a book lover, I have a huge TBR (to be read) pile but yet still buy more or get them from the library....I just can't seem to control myself around books. It might be because if I really enjoy one, I will read it in a day or 2 tops, so that's what I've been doing with Julia Quinn's books.


I just LOVE her, she writes Historical Romance novels and those are by far my favorites so I've been devouring through her Bridgerton Series and I can't seem to get enough, I may have to go find the ones I'm missing considering I realized I was reading out of order.....if you look above, I read When he was Wicked and now I've started It's in his Kiss. Great, now I realize I'm actually missing a TON from that serious LOL

It's a beautiful day here in Arizona, it's actually not very hot, only 86º right now so we're trying to figure out what to do. We want to go out and enjoy the day without spending too much money, of course in my perfect world, I wouldn't have to spend ANY money at all......that's why it's only in my world but a girl can dream can't she???

It's not that there's nothing to do, I mean, if money wasn't an issue we could go to the Wildlife Zoo (though aside from the money, I'm not interested in walking and hiking in this heat lol ), we could try the Rawhide Steakhouse (which we've been dying to try), we could also drive a couple hours to the Grand Canyon or Tombstone....see now I want to go to all of these places today, which is not going to happen, I guess I better find something close by.

One of the perks of being a Crew Chief!!!!

Well Curt got to do something yesterday that a lot of people (including me) only dream of. He was taken up on an F-16 for a ride. He came home and the smile on his face was just unbelievable, he said it was BY FAR the best thing he has ever done in his life and something he will never forget.

Of course he also said he will never do it again because he threw up twice LOL
He said he thought he was going to die during the flight, he's never felt so sick and so out of it as he did. Apparently they pulled 4 G's and did all these turns and max climbs etc. I'm so jealous but I doubt I would ever have the nerve to go on one of these myself.

I don't have much time to write this morning, here shortly I have an appointment at the eye doctor, he's going to be doing that pupil dilating thingamagig and I just hate people messing with my eyes so I'm not looking forward to it LOL

Anything to do with eyes freaks me out for some reason.

Yesterday for dinner I made spaghetti but I tried a new recipe in the slow cooker for Meat Sauce. It was a huge hit and everyone enjoyed it and the scent it left in the house all day long was just heavenly. I've posted the recipe for you at my food blog.

I wish I could stay longer but I have to get ready for my appointment. Wish me luck, hopefully I won't be seeing all weird for too long afterwards LOL

Slow Cooking Thursday!!!

I'm giving you 2 recipes today, a main dish and a dessert, enjoy :)


SLOW COOKER LEMON CHICKEN WITH POTATOES AND MUSHROOMS

One 3- to 4-pound broiler/fryer
2 cubes chicken bouillon
1/2 large lemon or 1 small lemon
1/4 teaspoon paprika

3 tablespoons minced fresh flat-leaf parsley
2 medium-size or 1 large onion, cut into wedges
2 cloves garlic, chopped
2 tablespoons soy sauce
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
6 to 12 small Yellow Finn or Yukon Gold potatoes, unpeeled
6 ounces fresh mushrooms, sliced 1/2 inch thick


Rinse and dry the chicken thoroughly. Cut off any lumps of fat. Put one bouillon cube inside the cavity. Squeeze the lemon, reserving the juice. Put the lemon rinds in the cavity. Put the chicken in the slow cooker, breast side up, and sprinkle with the paprika and parsley. Distribute the onion wedges and garlic around the chicken. Pour over the soy sauce and lemon juice and season with the salt and pepper. Crumble the remaining bouillon cube, and sprinkle that over the chicken as well. Top with the potatoes and mushrooms. Cover and cook on HIGH 3 1/2 to 4 1/2 hours.


To serve, discard the lemon halves and portion the potatoes, mushrooms, onions and chicken into shallow bowls or soup plates, discarding the skins and bones.

FRESH RASPBERRY BREAD PUDDING

5 to 6 cups coarsely crumbled or diced stale French bread, challah or rich white bread, crusts removed
1/2 pint fresh raspberries
2 cups heavy cream
2 cups whole milk
1 1/4 cups sugar
6 large eggs
1 tablespoon vanilla extract
Whipped cream for serving

Coat the slow cooker with butter-flavor nonstick cooking spray.

Layer half of the crumbled bread in the slow cooker, and sprinkle with half of the berries. Repeat the layers, ending with the berries on top. In a large bowl, whisk together the cream, milk, sugar, eggs and vanilla until smooth. Pour into the cooker over the bread cubes and berries, and gently push down the bread to evenly moisten. Cover and cook on HIGH until puffed and a knife inserted in the center comes out clean, about 2 1/2 hours.

Remove the lid and cook on HIGH for another 15 minutes.

Cover, turn off the cooker, and let the pudding stand to cool slightly. Serve warm or at room temperature, with whipped cream, if desired.

For the first time last night I had an anxiety attack

it wasn't pretty and I have never in my life felt so out of control with my body and mind.

I have been feeling it coming on for the past week, I was stressed, I was worried, I was letting doubt and what if's cloud my judgement and I was ALLOWING the negative energy to take over. I have to tell you, it's the worst feeling in the world. My heart was racing, I felt like I couldn't breathe, I had a chest pain, I felt crazy and nervous and shaky, it was just horrible.

This morning I woke up and I decided ENOUGH IS ENOUGH. I've backed myself into a corner where I do not like what I'm seeing. I remember a couple months ago where I was at my closest to God that I have ever been, my life was peaceful, it was calm and I was happy, extremely happy. Nothing bothered me, I put it all in His hands and I was content with what I had and where I was.

Then the news of the move to Arizona came and I felt myself engrossed in the planning and the packing, I didn't have time for prayer, I didn't have time to devote myself to the Lord and I slowly started slipping away, not even realizing where I was heading. I've felt distant the past couple of months and I've tried to get back what I had but I have to admit, shamefully so, that I didn't try hard enough. I didn't really devote myself to it, I wasn't putting my energy into it, it's almost like I adopted this lazy attitude, this complacence....."Oh I was there before, I'm sure I can just say I want it back and have it again". WRONG!!!!

Last night for me was a huge wake up call, it was that final push that I had to give myself. So this morning I cried and I begged and I offered myself to Him again and asked Him to forgive me and to please help me. I literally put my life into His hands and right away I felt a difference, needless to say, my anxiety today is minimal, I feel so much better and able to function and I'm smiling, thinking positive and looking forward to what life is going to bring my way. Praise the Lord, I finally feel I've turned a corner.

I had to get that off my chest before I could continue my post, you know when you get something on your mind and you just have to talk about it??? That's what I felt like.

Anyway, I sat down earlier and worked on my schedule, I needed to get it tweaked since the last time I drew it up, times have changed and things are a little different here, so I did that and tomorrow is my first day of sticking to it. We'll see how that goes.

I am so excited, one of my favorite bloggers, Kelli, said she had a great announcement to make and low and behold, she DID. We were anxiously awaiting the news but it was worth the wait. This is what she had to say:

Nicholas and I went back to the base library yesterday, we always have so much fun there, he loves the Children's Room as you can see in the pictures.





I'm going to keep this post short, whatever that means for me LOL, I have to start dinner soon and I also need to get some laundry put away.

I'm exhausted, that attack last night really drained me and I'm tired and I am counting down the minutes until bedtime. Hope you're all having a wonderful day.
