This sounds yummy! Isn't tapioca great for thickening sauces?

German Potato Salad is my mother's favorite. She used to make it from a can. She would love it if I made this for her. Thanks!

Tapioca, like pudding? I've never used that in a recipe before, I'll have to try it. For some reason I can't ever make potato salad. I always get my potatoes too done, and it ends up being mashed potatoes when I start mixing everything together. Most of the time I cheat and just buy it already prepared in the deli. I know too expensive that is why it is a treat, and we seldom have it.

Sandra, this is a great recipe! I've never had german potato salad because when I see it on a buffet table it always has pork bacon in it, but I'm going to test it out with turkey or beef. Thank you!

I never would have thought to use my slow cooker to make potato salad; although it does a good job of making scalloped potatoes. I am going to try this recipe (love the bacon!) but I find apple cider vinegar just smells too strong for my taste. What would happen if I omitted the vinegar, or is there a substitute I can use? Please let me know, thanks.
