Slow Cooking Thursday

With Christmas just around the corner, I thought we could all use some holiday slow cooking recipes.

Crockpot Honey Mustard Ham

* 5 lb. bone in fully cooked ham
* 1/3 cup apple juice
* 1/4 cup brown sugar
* 1 Tbsp. honey
* 1 Tbsp. mustard
* 1/8 tsp. pepper

Preparation:
Place ham in 4-5 quart crockpot and pour apple juice over ham. Combine brown sugar, honey, mustard, and pepper in a small bowl and blend well. Spread over ham. Cover crockpot and cook on low for 6-8 hours. Slice and serve. 12 servings

Looking forward to:
Breakfast out with friends. One of our friends is leaving for England at the end of the month so we've been trying to get as much fun in as we can.


Homemaking Tip for this week:
Try cutting your potatoes in half before baking them. Then rub them with shortening, put the cut side down, sprinkle with coarse salt and bake them at 350 degrees for an hour or so. They get a nicely browned crust on the underside and the insides are nice and soft.

Handmade Holidays!

It's that time of the year, we're scrounging around for the perfect Christmas present and if you're anything like me, you want it to be something just right.

What is better than a handmade gift? Something that you put your heart and effort into?

With that in mind, I decided that the next few weeks before Christmas, I'll be posting about easy and inexpensive holiday gifts that you can sew, crochet, knit or make right in your own kitchen.

Christmas Cranberry Bread

Yield: 1 loaf
Prep Time: 08 minutes
Cook Time: 1 hour
Ingredients:

* 2 Tbsp soft butter or margarine
* 1 cup sugar
* 2 cups all-purpose flour
* 3 tsp baking powder
* 1/2 tsp salt
* 3/4 cup orange juice
* 1 large egg, lightly beaten
* 1 cup fresh cranberries, chopped
* 1/2 cup chopped walnuts

Preparation:

1. Preheat oven 350 degrees F. Grease 8 X 4-inch loaf pan.

2. In large bowl, cream butter and sugar. Mix in flour, baking powder, and salt. Add orange juice and egg and stir until flour is wet. Fold in chopped cranberries and walnuts. Scrape batter into greased loaf pan and bake at 350 degrees F for 1 hour or until inserted toothpick comes out clean. Remove from oven and let sit for 5 minutes before turning out. Let loaf cool on rack.

Carrot Walnut Bread

Yield: 1 loaf
Prep Time: 10 minutes
Cook Time: 1 hour
Ingredients:

* 3/4 cup brown sugar
* 2 Tbsp shortening
* 2-1/2 cups all-purpose flour
* 2-1/2 tsp baking powder
* 1 tsp baking soda
* 1 tsp salt
* 1 cup milk
* 2 med. eggs, lightly beaten
* 1 cup grated carrot, about 1 large carrot
* 1/2 cup chopped walnuts

Preparation:

1. Preheat oven 375 degrees F. Grease 9 X 5-inch loaf pan.

2. In large bowl, cream brown sugar and shortening. Mix in flour, baking powder, baking soda, and salt. Add milk and eggs and stir until flour is wet. mix in grated carrot and walnuts. Scrape batter into greased loaf pan and bake at 375 degrees F for 1 hour or until inserted toothpick comes out clean. Remove from oven and let sit for 5 minutes before turning out. Let loaf cool on rack.




The idea is to keep it simple, there's no need to go completely overboard.

For the kids teachers, I'm doing both a Lemon Drizzle Loaf and some Snickerdoodles.



I'm also including Single Serving Pies in a Jar. I've been wanting to try these for a while and I think this is the perfect opportunity.

You need half-pint jars and I find those at my base commissary but if you can't locate them at a store near you, here's a link to where you can get them at Amazon, they're pretty inexpensive.

Try to keep in mind any food allergies or dislikes for the gift recipient.

Why not try putting a few pieces of Espresso Chocolate Chip Shortbread in a large coffee mug and wrap it in cellophane?

These are just a few ideas, I am using them for the teachers, friends and family.

Oh boy, not much time left!


I keep looking at the calendar and hoping that by some miracle it will just stop or rewind or something, anything, to make the time slow down.

Do you realize we have but 20 days until Christmas???? That's it.....not much time at all and I for one have not bought one single present. For shame!

I'm more of a *under pressure buy everything Christmas Eve* kinda gal, what can I say, I love it.

How are you doing on the shopping front? Do you have everything bought and wrapped and ready to go? Are you just doing Homemade gifts this year?

Speaking of Homemade gifts I always do them, but I'm drawing a completely blank and I need all the help I can get, so could my wonderful, crafty, inspiring readers throw me a life line? Give me some ideas on gifts for hubby and kids, keeping in mind that I have a girl who is 10 and a boy who is 6 years old.

Now that I got that paranoia out of my system *snicker* I can tell you that it's only 37 degrees here today and I'm in pure bliss. You can stop laughing because I'm sure most of you deal with these cool temps year long but for us folks melting in the desert when it dips below 60 degrees it's considered a good winter LOL

It's cloudy and rainy and cold and I'm sipping on some hot coffee with Creme Brulee Coffee Creamer. Goodness, have you tried this flavored creamer? I'm usually more of a milk gal but I tried it for the first time about two weeks ago and now I can't do without, it's so delish.

My day is going to be spent pottering around the house, laundry and dishes and cleaning and crocheting, watching movies, eating popcorn and planning, lots of planning for Christmas.

Lists and Gift ideas and Menus and all that good stuff.

I best hop on out of here and get started. I do hope you're enjoying your weekend and for those with snow, I envy you at the moment, I would give anything for some beautiful white snowflakes drifting down from the skies, but I'll settle for made up snowstorms and warm comfy blankies.

Slow Cooking Thursday!

4 Tbs (60 ml) butter
1/2 cup (125 ml) honey
1/4 cup (60 ml) Dijon mustard
1 Tbs (15 ml) curry powder
Salt and freshly ground pepper to taste
1 1/2-2 lbs (675-900 g) chicken pieces, skinless and/or boneless if desired

Combine the butter, honey, mustard, curry powder, salt, and pepper in a small saucepan and cook over moderate heat until combined. Place the chicken pieces in the slow cooker and pour the sauce over the top. Cook covered on low heat for 6 to 8 hours, until the chicken is tender and the juices run clear when pierced with a fork. Serves 4 to 6.
