A few years ago I put up a recipe for Homemade Crunchwrap, and it's been one of the most pinned and shared recipes.
If you're a fan of Taco Bell and like Crunchwraps, you may want to give it a try.
So think about a crunchwrap but in a sheet pan, where you can just cut
it up into small individual pieces. What could be better than that?
I'm actually thinking this would be a great dish to serve at get
togethers and potlucks.
The recipe comes from Tasty and I adapted it to our taste.
Sheet Pan Crunchwrap
Servings: 14
2 pounds ground beef
1 package taco seasoning
8 Large Flour tortillas
5 Corn tostadas
Shredded Cheddar Cheese (I didn't measure, just eyeballed and added as much as I liked)
Shredded Mozzarella
Nacho Cheese
Diced tomatoes and lettuce
Preheat oven to 375.
Generously spray a sheet tray with non stick spray.
Brown the ground beef over medium heat, when done, drain excess oil and
add the taco seasoning packet. I added in a tiny amount of water just
so it wasn't so dry.
Place the tortillas so half of the tortilla is hanging over the edge of
the pan. Place 6 tortillas around the border of the sheet tray and one
tortilla in the middle, covering the exposed sheet tray.
Sprinkle half of the cheddar cheese and half of the mozzarella cheese over the tortillas.
Spread the ground beef over the cheese, then scoop on some nacho cheese
over the beef. Place the corn tostadas on top and lastly, sprinkle on
some diced tomatoes and lettuce.
Sprinkle more cheddar and mozzarella cheese on top, place the last flour
tortilla on top of the cheese, in the center of the crunchwrap, then
fold over the flour tortillas so they cover the filling and touch the
center tortilla.
Place another baking tray on top of the crunchwrap and then weigh it
down with a cast iron skillet, or something else that is heavy.
Bake for 20 minutes, then remove the skillet and the baking tray, and
bake for another 10 minutes or until the tortillas are nice and brown.
Let sit for about 5 minutes, and slice into smaller rectangles. Enjoy :)
Charting the life of Isabella I of Castile, one of the most important women in Spain’s history, Isabel follows her passionate story from childhood to being crowned Queen. From her political struggles within King Henry IV's court to her wedding to Ferdinand of Aragon, the drama encapsulates the passions, emotions and sacrifices of a woman who refused to just be a figurehead and whose outlook was ahead of her time.
Without a doubt, the show of the week to watch, has to be Isabel.
I have had this one on my list for quite a few years, matter of fact, when it was first released in 2012, I made note of it, but over the years, I forgot about it. There are so many wonderful shows, especially historical fiction, that it's often hard to keep track of them all.
However, I watched all 3 Seasons of Isabel, over the past week, and I must add it to my favorites.
It goes without saying that, it is visually stunning, the actors are brilliant, and it brings to life the story of Queen Isabel of Castille, and her husband King Ferdinand II of Aragon.
Even if you are not a history buff, but enjoy historical fiction, this is a must see. Actually, it became a binge for me. I could not stop watching, and practically took my laptop with me everywhere, while I did laundry, while I cooked dinner, when I took a long bubble bath, and I also stayed up quite late watching "just one more episode." We've all been there, and done that right?
Two of my absolute favorite Spanish actors, play the lead. Queen Isabel is played by Michelle Jenner and King Ferdinand by Rodolfo Sancho. Together, they make a stunning couple that really played on the love the King and Queen felt for each other.
Married for 35 years, they ruled over Castille and Aragon, as a force to be reckoned.
One thing that always strikes me in any of these shows, and especially when they stay true to history and facts, is the immense grief and heartache these people went through. The stillbirths, the loss of heirs, the cheating and backstabbing, the attacks on their lives, the constant wars. It is surely a life I would haven't been able to live through......but yet, find completely riveting and fascinating.

If you enjoyed The Tudors, you will most certainly enjoy this one too.
When you start digging into all this history, and connecting all the King and Queens, it's quite fascinating to see. In the series, we see the lives of Isabel and Ferdinand's children. They had 6 all together, but only 5 survived birth, with only 3 surviving later in life.
The whole purpose of King and Queens marrying, in those days, was to form alliances and to produce heirs, but quite often, the road to a male heir was not as easy as they hoped for. What I loved about Ferdinand is that he loved all his children equally, never once forsaking a daughter just because she was not born male and therefore the heir to the throne, everyone wished for.
Together, they had:
Isabella, John, Joanna, Maria
and Catherine. Isabella and John
died before the Queen without lasting offspring.
Joanna was nicknamed
“Joanna the mad” for her mental instability and married Philip the
Handsome. I swear, this guy made me want to reach through the screen and smack him, multiple times. He was such a horrible man.
Catherine of Aragon first married Arthur Tudor, Prince of
Wales, and then after his death the brother King Henry VIII of England. Who doesn't know about King Henry VIII and Catherine of Aragon? One of my absolute favorite Tudor marriages.
As with most marriages in those days, the couple usually never met, couldn't stand each other, didn't feel much love between them and there were multiple mistresses in and out of the King's bed.
Ferdinand did cheat on Isabel multiple times, producing a few children outside of the marriage, but he absolutely adored and loved his wife, and eventually gave himself to the marriage completely, and to ruling alongside the woman he not only loved but admired as a strong, powerful queen.
Isabel on the other hand, adored her husband and would not accept any relationship outside of their marriage, but she was fair and just, and her priority was to Castille and her people.
In the show, we also get to learn more about the Portuguese Kingdom, the fights, the wars and so on, which to me was wonderful. I am ashamed to admit that I know more about English Monarchy and history, than I do about my very own Portuguese heritage. I need to remedy that, immediately.
I hope you will give this one a try.
The follow up to this show is called Carlos, Rey Emperador. It follows the story of King Charles, Queen Isabel and King Ferdinand's grandson, who is actually the son of Phillip and Queen Joanna (who was known as Juana La Loca, Joanna the Mad One).

Good morning everyone, welcome back to my little blog. I hope your weekend was good, mine was although we had pretty strong storms, lost power, the power surge blew Nick's computer.....the joys right?
But, we are here, bright and early, and ready to get started with another day. Today is my first official day home, and for the next few weeks I have nowhere to go. I plan on taking full advantage of this, and really jumping back into my homemaking.
I still haven't done my spring cleaning, so that is definitely on the list. I need to sit down and write it up, so that I know what I'm doing, when.
But, for now, let's get right on with our post.

The house is actually tidy, but I need to do some dusting today, vacuuming and I want to give all the carpets a clean again.

We had some storms move in last night, which caused us to lose power from 7:30pm to 11:30pm. It's not a big issue, but unfortunately this time, when the power came back on, it caused a power surge that fried Nick's computer power supply.
We spent the whole Sunday fixing it, obviously having to buy a new power supply, but thankfully got it back up and running.
We have all our electronics plugged into Surge Protectors, but Nick's wasn't. He had unplugged it for something, and when he plugged it back in, he didn't use the surge protector. Lesson learned!!!
Without a doubt, one of my favorite days of the week, along with Friday and Monday. I know I may sound weird when I mentioned Monday, but I actually really love Mondays.
But the other day I was wondering about the days of the week and came upon some interesting facts. Another thing you may find weird about me, but I really love learning and researching and sometimes, I get on the internet and before I know it, I'm down a rabbit hole of some kind.
I guess I just find things interesting that maybe others may not....or they may, who knows, but with that said, here are some cool fun facts about this day of the week.
1. In Scandinavia, Saturday is not named after Saturn. Instead, it is known as Lordag, which translates to bathing day. This is said to be related to the Viking practice of Saturday bathing.
I'm pretty sure this is one of the things, I would have most hated about living in those days. Once a week bath. Nope!
2. In Sweden, Saturday is often the only day of the week when young children are allowed to eat candy.
3. In Nepal, Saturday is the last day of the week and is the only official weekly holiday.
4. In folklore, Saturday was often viewed as the best day to hunt vampires,
as this was the day of the week when they were restricted to their
coffins. It was also believed in the Balkans that if somebody was born
on a Saturday then they could see a vampire that was invisible to
others, and that these people were the best recruits to become vampire
hunters.
5. Saturday is often associated with the color purple. This may be because
the planet Saturn, which is associated with Saturday, is also associated
with the color purple.
6. In some parts of the world, Saturday is the traditional market day. This
may include outdoor markets, where vendors sell fresh produce, meat,
and other goods, as well as flea markets and antique markets.
