{ Winter Watch }

_MG_3952

My day started very early, as always.  Lately I find that when the alarm goes off at 6am, I feel like I have slept for only about 5 minutes.  It's so hard getting out of a warm comfy bed, to dark skies, freezing cold and rain.

I've been running around, and I'm finding that I'm spending a lot more time out of the house, than in, which is so frustrating because I'm a homebody and love being home puttering around.

After making coffee, I took Curt to work then came home, quickly got the dishwasher unloaded and reloaded, made Jasmine's lunch and then had to go and take her to work.

The weather was absolutely pitiful.  I love rain, but I don't like driving in it, and today I had a bit of everything, fog, drizzle which turned to a downpour while I was on the highway, hail, and my truck sliding when it hit an oil patch on the road.  So unnerving when that happens.

But thankfully the Lord sat with me while I drove and kept me safe.

Curt was actually released earlier today, because of the Winter Watch we are under.  I'm not sure if we will get the snow, we don't often get snow in our area, but it has happened before.

We are currently under a Winter Watch, expecting lots of rain and even snow.  I'm not sure about the snow, but the rain has already been coming down since this morning.

After my morning drop offs, I was able to come home, sit down with a hot cup of coffee and some butter cookies.  I do so enjoy sitting in my dining room, lighting the candles and just enjoying the quiet.

One of the things that has been helping me a lot this past week, has been my slow cooker.  I've used it pretty much every single day for dinner, because I haven't been home on time to fix dinner.  Today was no exception, I put in a Pizza in a Pot, and let it go all day on slow.  But I also wanted to show you something I do to make things easier.

I used to buy peppers and often they would go to waste in the fridge which would be quite frustrating.  A couple months ago I decided to prep them as soon as I got them home so that I would save them from going bad.  It's nothing extraordinary, but it has helped preserve the peppers and ensures that I always have some ready for any recipe that I may need, or if I just want to add them as an extra.

I chop the peppers and I also chop some onion, place in a ziploc bag and then keep it in the freezer.  When I need to use some, I just grab a handful and pop in the pot with the food I'm preparing.

Give it a try!

While I was in the kitchen, I grabbed about half a loaf of bread which was needing to be used up, and made some quick ham, cheese and lettuce sandwiches.  I also took the leftovers from last night's dinner which was kind of a burrito bowl  mix, and made some wraps as well.

The reason I made these were for lunches.  I keep them in a plastic container and either the kids grab one or the other for a quick lunch, or I pack them for Curt or Jasmine's work lunches.  It just helps and all it takes is some prep time on my part to make my life easier  in the coming week.

So far, Jasmine is off tomorrow, thank goodness, she is actually really tired because they ended up scheduling her in to work every single day this past week, and since she's working retail, it's been crazy with all the holiday shopping.   But she may be called back in, we are not entirely sure.  I am hoping not though.

I also need a day off from driving around, to get caught up on my housework, finish Christmas shopping, start wrapping, and maybe work on some sewing or crocheting.

It is really chucking it down outside, so I'm going to finish this post off, and then crawl into bed and catch up on some tv shows and Youtube.  I can't begin to tell you how excited I am to not be getting up at 6am tomorrow.  Yay!!!

I remember my Annie’s first job, her first day as well. She came home in tears, as she felt she had made a mistake, but it was something that happened commonly. It was a good experience though. I’m sure Jasmine will settle in to the routine. She’ll no doubt vent to you this weekend.

She's loving it, she loves the job and the people she works with. She's just not used to working yet, so it's all been a huge change and overwhelming, and she's on her feet all day so she complains that her feet hurt, but other than that, she's doing amazing :)

Hope you stay safe and warm during the winter weather. Your posts always have such a cozy feel to them, I'm quite the opposite of you in that I enjoy running around a bit but too much of it does get draining. Hope you get to have a nice, quiet relaxing weekend at home!

I'm going to have a lovely long catch up of your blog tonight. While liking your instagram today, I was thinking I hadn't seen a post from you in ages, yet here you are! You had somehow fallen from my follow list. I hope you're not tiring yourself out with all this dashing around. You've not long been ill. X

We are getting hit with a winter storm here in NC and it's ironic because we moved here to avoid the snow that we had up North, lol. :-) Hope things settle down there for you soon, enjoy the rest of your week.

Blessings,
Jill
