For Christmas I got Sandra Lee's Slow Cooking cookbook so today's recipe is one from the book and one I'll be trying this coming week.
Slow Simmered Chipotle Rib Sandwiches

1 onion
3 1/2 pounds beef short ribs
1 envelope beef onion soup mix, Lipton
1 jar (16-ounce) chipotle Salsa, Pace
1/2 cup ale-style beer
Kaiser Rolls, split and roasted
Place onion in a 4-to 5- quart slow cooker. Add ribs to slow cooker, meaty sides up. Sprinkle with onion soup mix. Add salsa and beer.
Cover and cook on LOW heat setting for 10 to 12 hours.
Transfer ribs from slow cooker to a cutting board. Tent with aluminum foil until cool enough to handle. Using tongs, transfer onions from cooking juices to a serving bowl. Remove meat from bones (it should fall off); shred. Serve on kaiser rolls. Serve with onions and cooking juices.
