Slow Cooking Thursday!

Don't forget to add your name to Mr Linky and a link back to your SCT post so others can come by and see your recipe too.

As always, share your slow cooking recipes but if you REALLY REALLY don't have one and still want to participate, then you can share any kind of recipe.

Love all the ideas from your Thursday link up, Sandra!

I'm back this week with crockpot chicken that I modified from A Year of Crockpotting. Super easy and delicious and there is a bonus risotto recipe in my post if you're interested!

Organizing Tip Thursday is up today on my blog if you'd like to stop by.

Hugs,
Steph

My hubby would so love this. I have to make this as soon as I have a working right hand. I love the idea of the touch of lemon in there.

Sausage and Peppers! I just made this yesterday
2 lbs sweet or hot italian sausage
2 yellow onions chopped
1 green bell pepper cut up
1 red bell pepper cut up
1 yellow bell pepper cut up
2 bay leaves
4 cloves of garlic minced
14 oz can diced tomatoes undrained
6 oz can tomato paste
1/2 cup dry red wine or water
1 tbsp dried parsley
1/2 tsp oregano
1/2 tsp basil
1/2 tsp salt
1/8 tsp pepper

Poke hole in sausage and boil for 20 mins
layer half of the onions on bottom of crock pot, then add half of the peppers. Add the sausage then the rest of the onions and peppers. Add bay leaves and garlic.
Combine diced tomatoes, tomato paste and red wine in small bowl and mix well to blend. Pour over mixture in crock pot. Cover slow cooker and cook on low for 6 hours.
One hour before mixture is done, mix together parsley, basil, oregano and salt and pepper. Add to crock pot and stir well. Cover and cook for 1 more hour.
Serves 8

Enjoy!
